Orecchiette is an Italian term to indicate a kind of pasta that resembles small ears. In fact, Orecchiette literally means small ears in Italian, from the word "orecchio", which means ear. Orecchiette is the plural and most used form, while orecchietta is the singular form.
This home-made pasta is typical of the regions of Puglia and Basilicata and is served with cime di rapa, a type of turnip green.
The correct pronunciation of orecchiette in Italian is oh-reck-yet-eh, where the -yet part contains a slightly closed "e" sound in proper Italian diction. Depending on the region of provenance, especially in Northern Italy and around the are of Milan, Italians may pronounce a more open "e" sound.
