This home-made pasta is typical of the regions of Puglia and Basilicata and is served with cime di rapa, a type of turnip green.
The correct pronunciation of orecchiette in Italian is oh-reck-yet-eh, where the -yet part contains a slightly closed "e" sound in proper Italian diction. Depending on the region of provenance, especially in Northern Italy and around the are of Milan, Italians may pronounce a more open "e" sound.
