Coda alla vaccinara

Italian traditional recipe from Roma consisting of an oxtail stew with tomato sauce and vegetables. Vaccinara means cooked the way the vaccinaro (the cattle butcher), used to cook such a poor piece of meat, a leftover that nobody wanted.
